Uttar Pradesh has been rapidly developing its food processing industry to create value from its enormous agricultural output and generate additional income and employment for its farming communities. The state is the largest producer of several agricultural commodities including wheat, rice, sugarcane, mango, potato, and milk, and these raw materials provide a strong foundation for food processing enterprises of various scales. Mango processing is a particularly significant sector, with the Malihabad belt in Lucknow district being famous for producing some of the finest varieties including Dasheri, Langra, and Chausa. Mango pulp extraction units, juice plants, pickle and chutney manufacturers, and mango candy producers have established facilities in the region. The state government has been promoting agro-processing zones to provide common infrastructure for food processing units. The potato industry in Uttar Pradesh is centred in districts such as Agra, Aligarh, Farrukhabad, and Hathras, which together account for a major share of the state's potato production. Potato chips manufacturers, starch producers, and frozen food companies source their raw materials from this belt. Cold storage infrastructure in these districts has been expanded to reduce post-harvest losses and provide price stability for farmers. The dairy industry is another major pillar of UP's food processing sector. The state has a large livestock population and significant milk production, and both cooperative and private dairies operate processing plants for pasteurised milk, butter, ghee, paneer, and other dairy products. The Pradhan Mantri Kisan Sampada Yojana has provided financial support to food processing units for infrastructure creation, technology upgradation, and cold chain development. Mega Food Parks have been developed in the state to create clusters of food processing units with shared infrastructure. These initiatives are aimed at increasing the value addition in agriculture and reducing the income gap between farmers and urban consumers.
